Whole wheat MW mug brownies

Chocolate brownies, simply referred to as brownie, is a square or rectangular baked chocolate baked treat. Brownies can be either in the form of fudge or dense depending upon the recipe. Nuts, cream cheese, chocolate chips can be added to the recipe. If needed, it can be frosted according to your taste buds. The brownie was developed in the US in Palmers House Hotel in Chicago and was popularized in the US. It  is accompanied with milk, can be served warm with ice cream, topped with whipped cream, sprinkled with powdered sugar, or just simply as a fudge.

This recipe is a simple instant brownie that can be baked in microwave and can be quickly served for your kids. I use only healthy ingredients for my baking and here i have tried this brownie in wheat flour.

Here is to make it:

1. Mix all the dry ingredients in the bowl itself with a fork or else you can mix all in a small mixing bowl and transfer to a microwave-safe bowl and bake. It can be baked in your microwave-safe coffee mug too.
In a microwave safe bowl, add whole wheat flour, cocoa.

2. To the same bowl, add cane sugar and salt. Mix well with a fork until all are well combined.


3. Now add all the wet ingredients to the dry ingredients we have mixed already in the bowl. Add oil, water, and vanilla extract.


4.  Mix well with the dry ingredients until they are all well combined. Remove fork, and add chocolate chips on the top to garnish for the extra chocolaty flavor or else you can omit it. Place the prepared bowl in the microwave and bake them for about 45 seconds. Open the microwave and check your bowl. If you have water floating on the top, bake again in microwave for about 30 seconds intervals. Remove the bowl from microwave when there is no water is floating on top of the baked brownie.


5. Enjoy your warm brownie.

Here comes the recipe

Makes - 1 small brownie

Ingredients:

Whole wheat flour - 3 tbsp
Cocoa powder - 3 tbsp
Cane sugar - 3 tbsp
Pinch of salt
Water - 3 tbsp
Coconut oil - 3 tbsp
Vanilla extract - 1/2 tsp
Chocolate chips - few(optional)

How to bake it:

1. In a microwave safe bowl, add whole wheat flour, cocoa, sugar and salt. Mix all the dry ingredients in the bowl itself with a fork.

2. Now add all the wet ingredients to the dry ingredients. Add oil, water, and vanilla extract . Mix well with the dry ingredients until they are all well combined.

3. Remove fork, and add chocolate chips on the top to garnish for the extra chocolaty flavor or else you can omit it.

4. Place the prepared bowl in the microwave and bake them for about 45 seconds. Open the microwave and check your bowl. If you have water floating on the top, bake again in microwave for about 30 seconds intervals. Remove the bowl from microwave when there is no water is floating on top of the baked brownie.

5. Cool it for about 10 minutes in the bowl and serve warm with ice cream, or you can grab it as such.


Note:
1. Dont use milk. It doesnt give good results.
2. You can prepare in any MW safe mugs and bowls.
3. Use any flavorless oil of your chice. I prefer coconut oil in baking nowadays.
4. Each MW has different power settings and so timing of baking your brownie may vary.

Baked or MW Cauliflower fry

Ingredients:

Cauliflower florets - 1 cup

Sambhar powder - 1/2 tsp

Red chilli powder - 1/2 tsp

Turmeric powder - 1/4 tsp

Corn flour - 1 tbsp

Salt

Oil - 2 tbsp or more

Method:

1. Wash the florets in hot water and drain.

2. Half boil florets in water adding salt and turmeric powder.

3. In a glass bowl, add florets, sambhar powder, oil, chilli powder and cornflour and mi well.

4. Bake at 180 deg C for 20 to 25 min stirring in between once.
  
                     (OR)

5. MW HI for 9 - 10 min stirring in between once.

6. Serve with tomato sauce or with chapathis.






Okra/ Ladies finger Pepper fry

Inspired from here I tried this okra fry. Thanx lata for this wonderful fry. Woooow.. It came out very very crispy. I added pepper powder instead of red chilli powder. Also i have added curd and lemon juice to remove the stickiness that is present in ladies finger. Usually I add this while cooking in stove top too. Here comes my version of 100% microwave cooked okra pepper fry.


    













Ingredients:

Fresh Okra/ Ladies finger - 250 g

Pepper Powder - 2 tsp

Turmeric powder - 1/4 tsp

Salt

Oil - 2 tsp

Curd - 1 tsp

Lemon juice - 1/2 tsp

To temper:

Mustard seeds - 1/2 tsp

Hing - 1 tsp

Method:

1. Wash ladies finger and wipe them dry completely.

2. Cut into desired size. I slices very thin.

3. Mix salt, 1 tsp oil, pepper powder, turmeric powder, curd and lemon juice with the ladies finger and mix it well.

4. Rest it for 5-10 minutes.

5. In a MW safe bowl/ Tupperware bowl, Add 1 tsp oil and MW HI for 30 sec.

6. Remove and add mustard seeds, MW HI for 1 min.

7. Add hing and MW HI for 1 min.

8. Add the okra mixture and and cook covered on MW HI for 6 - 7 min stirring in between once or twice.

9. Rest it for 5 min inside the MW.

10. If you want more crispy, add few more minutes in the MW.

11. Open and serve with curd rice..







Microwave Croutons

Ingredients Required:

Bread Cubes - 2 cups

Butter - 3 tbsp

Garlic - 1 tsp chopped

Oregano - 1/2 tsp

Salt - 1/4 tsp

Method:

1.Melt butter in microwave. MW HI for 1 min.

2. Add chopped garlic and MW HI for 1 min.

3. Toss in rest of the ingredients. Cook on HI for 3 - 4 min.

4. Allow to stand till cool and crisp.




Paneer Tikka

Ingredients:

Paneer – 200 gms (cut into squares)

Chilli powder - 2 tsp

Salt – 1 tsp

Kasoori Methi – 1 tsp (crushed)

Thick curd(Hung curd) – ½ cup

Amachur powder – 1 tsp

Garam masala powder – 1 tsp

Ginger garlic paste – 1 tsp

Chat masala – ½ tsp

Butter/ oil for coating

Veggies(Optional):

Onion - 1 (cut into squares)

Capsicum - 1 (Remove seeds and cut into small squares)

Tomato - 1 (Remove the seed part inside and cut only outer skin)

Method:

1. Marinate the paneer along with all the above ingredients for 2 to 4 hours. If needed, Sprinkle water to bind them.

2. Arrange on a greased plate or insert in a skewer arranging paneer, onion, capsicum, tomato and again paneer or according to your choice and continue the same.

3. Place this plate on a high rack stand in a microwave.

4. MW + GRILL for 3 mins.

5. Then turn the paneer pieces on the other side, dot with butter and sprinkle chat masala and GRILL for 5 to 7 min.

6. Serve with peas pulao, Vegetable pulao...

MW Pineapple rava Kesari

Ingredients:

Rava - 1 cup

Milk - 1 cup

Sugar - 1 1/2 - 2 cup

Water - 1 1/4 cup

Pineapple essence - 2 tsp

Pineapple pieces - 1/2 - 1 cup

Tutty fruity/ cashew,raisins - few

Method:

1. Roast rava in a glass bowl MW HI (900 or 850 W power) for 2 min, Stirring inbetween ones.

2. Add milk, water, colour mix well, MW HI for 3 min with lid closed.

3. Next add sugar, Ghee, Pineapple pieces, MW MEDIUM ( 600 W power) for 3-4 min.

4. Standing time 4 mins.

5. Add essence, tutty fruity/ nuts, mix well and serve hot.





MW Vegetable Briyani

Ingredients:

Basmathi rice - 1 cup

Veggies - carrot, beans, peas, cauliflower, potatoes cut in even size - 1 - 1 1/2 cups

Ginger garlic paste - 1 tbsp

Chopped onions - 2

Chopped green chillies - 2 or 3

Corainder leaves and mint(puthina) leaves - handful

Curd - 2 tbsp / Chopped tomato - 1

Spices:

Bay leaf - 1

Cardamom - 2

Cinnamon - 2 or 3

Cloves - 3 or 4

Cashew - 10

Shahjeera - 1 tsp

Turmeric powder

Salt

Oil and Ghee

Method:

1. Wash and soak basmathi rice in 2 cups of water for 20 mins.

2. Heat oil and ghee in a kadai, add all the spices above, allow it to splutter.

3. Add chopped onions and chillies, fry.

4. Add Ginger garlic paste, fry for 1 - 2 min.

5. Add the chopped veggies and curd/tomato and cook it for 2 to 3 min.

6. Remove from the stove.

7. In a glass bowl, mix rice with the veggies above, add salt, coriander leaves and mint leaves.

8. MW HI (900 or 850 W) for 8 mins.

9. MW MEDIUM (600 W) for 8 mins.

10. Standing time - 5 mins in microwave.

11. Remove, mix well and serve with raitha.
