Ragi roti

Ingredients:
Ragi flour- 3 cups
Red chili powder- 11/2 tsp
Salt-1 tsp
Onion-1-medium- finely chopped
Coriander leaves- 1/4cup- finely chopped
Curry leaves -2tbsp- finely chopped
Carrot- 1- finely grated
Oil-2tbsp




How to make:
1. In a mixing bowl, mix everything adding water into a soft dough.



2. Take an aluminum foil/banana leaf, apply oil and spread it.
3. Take a big size Ragi balls and spread using hand with little oil sprinkled in hand.



4. Heat a dosa tawa and reduce the flame to low-medium.
5. Flip the spread roti on the tawa upside down and carefully remove foil.
6. Apply oil over the edges and cook for 3 min.
7. Flip it over and cook on the other side for 4 min.
8. Serve hot and enjoy.
9. Can eat as it is or if you want you can pair it with spicy coconut chutney.




Phulkas - Fluffy Rotis

Phulkas can be easily prepared at home. I use only wheat flour for this phulkas. And some add milk for dough preparation, but I didn't. You need a phulka ring for this roti preparation. It costs just 25 Rupees.



Here comes the recipe:

Ingredients:

Wheat Flour - 1 cup

Salt

Oil - for brushing

Phulka Ring:



Preparation:

1. Knead flour along with salt sprinkling little water to a soft dough. Leave it for 1/2 hour.

2. Make small balls ( Make balls so that it fits phulka ring).

3. Spread a thin sheet.




4. Heat tava and place the phulkas on the hot tava.

5. Cook till bubbles arise from both sides of the phulkas.



6. Transfer immediately to the phulka ring which is placed on the stove top.

7. Keep in High flame when you transfer the phulkas.

8. When pluff up, turn on the other side and wait for 5 sec and remove.



9. If needed, Can brush it with oil.

10. Serve with Paneer Butter Masala, Mutter Paneer.


Ragi and Oats Roti

In kongunadu, only ragi roti is eaten by most. So i planned to add oats to add more nutrients to the roti. It is healthy too as it is given here to post delivered women for milk as well as for weight reduction.

Here comes the recipe:

Ingredients:

Ragi flour/ Finger millet flour - 2 cup

Oats  - 1 cup ( powder it )

Onion - 2 medium - chop fine

Carrots - 2 medium - grate it

Red chilli powder - 2 tsp

Curry leaves - few - chop fine

Coriander leaves - few - chop fine

Oil

Salt

Method:

1. Mi all these to form a not stiff but not soft dough using water.

2. Heat a tava, sprinkle some oil, spread it and lower the flame.

3. Take a medium ball and place in the hot tava and spread as a thin roti.

4. Apply oil on both sides and cook.

5. Serve with coconut chutney or raitha or else it can be eaten without any side dish.

Variations:

1. You can add green chillies instead of red chilli powder.

2. You can also add grated cucumber.



Lachha paratha

Lachha paratha is a flat style indian bread/ roti and it will be very crisp. Do try this out.

Ingredients:


whole wheat flour/ Maida - 2 cups

Water to make dough 

Salt to taste  

Ghee / Oil  - 1/2 cup

Method
:

1. Mix the flour and salt and knead into a soft dough with a little water at a time. Keep aside.

2. Mix 3 tbsps of ghee with 1 tbsp of flour and keep aside.

3. Divide the dough into small sized balls.

4. Take each ball and roll into a long, finger-thick noodle shape.

and spread like a thin finger shape like this one.

5. Coil this long finger strip into a spiral. 




6. Flour a rolling surface lightly and very gently roll out the spiral into a flat circle about 5" in diameter (1/3" thick).


7. Heat tava on a medium flame.

8. Place the paratha on the hot tava. Turn it after 1/2 minute and spread ghee on one side. Then flip it over again apply ghee/oil. Fry it till its crisp and golden brown.


  
9. The resulting paratha will be crisp and flaky!

10. Serve with Mutter Paneer.


Roumali Roti


Ingredients Required:

Maida - 1 cup

Wheat flour - 1 cup

Rice flour - 1 cup

Ghee - 1/2 cup

Oil - 1 tbsp

Salt - 2 tsp

Method:

Add maida, wheat flour, salt, oil and mix well.

Add water and make it a hard dough.
 




Make balls and make 2 rotis.
 

 Apply ghee/oil on one side of each.

Sprinkle
rice flour on the oil and spread it.




Place in line the 2 rotis and spread as a thin roti.




Put in a hot tava and cook roti sprinkling some oil on it.






Then separate the 2 rotis.


Rotis will be like a paper




Serve hot with Paneer butter masala, palak paneer.
