Bakery style Whole wheat banana choco chip muffins

Makes- 12 jumbo muffins


While googling I came across this muffins which said bakery style muffins. Truly it’s a bakery style muffins with extra sponginess. I substituted whole wheat flour and tried it.



Ingredients to make:
Whole wheat flour- 13/4 cup+2tbsp
Baking powder- 1tbsp
Baking soda- 1tsp
Ground cinnamon- 1tsp
Salt-1/4 tsp
Butter- 1/3 cup, melted
Cane sugar- 11/4 cup
Eggs-2
Vanilla extract- 1tsp
Banana- 4-medium- mashed
Chocolate chips/walnuts- 1/2 cup



How to bake:

1. Preheat oven to 425 F/220 C.
2. Sieve flour, baking powder, baking soda, cinnamon and salt for 3-4 Times.
3. In a mixing bowl, whisk together melted butter, eggs, sugar, vanilla extract, mashed banana so that it is well combined.
4. Now add the flour and mix it gently.
5. Now pour the batter in muffin tray lined up with liners(I used tulip liners.
6. Top it up with chocolate chips/ walnuts. If needed, you can mix half of them in the batter too.
7. Now bake it in the preheated oven at 425 F/220 C for 5 minutes.
8. Now reduce the temperature to 375 F/190 C while muffins are inside the oven and bake it for 12-15 minutes for normal muffin sizes or 18-20 minutes for jumbo muffins. Mine was done in exactly 19 minutes.
9. Remove from the oven and let them cool in tray for 10 minutes.
10. Unmould from the pan and allow it to cool at room temperature.
11. Serve, eat and enjoy the cuppas. 

Notes:

1. Original recipe calls for milk. I forgot to add it to the recipe. Beyond that also this muffins turned out awesome.
2. Also I added extra banana to the recipe.

Vegan banana muffins

Actually i got this recipe while browsing the net from Harini's blog. Thanx harini for your wonderful recipe. I had  some ripen bananas today and so I decided to bake this muffins. I halved the recipe and I baked it today. I omitted nuts from the original recipe as my kid doesn't love to eat it. Muffins were quite fluffy and moist. My kid loved it a lot. Here comes the recipe.

Ingredients:

Maida - 1 cup

Whole wheat flour - 1/2 cup

Sugar - 3/4 cup

Oil - 1/4 cup + half of 1/4 cup

Water - 1/4 cup + half of 1/4 cup

Mashed Bananas - 2 cups ( I used poovan variety)

Baking powder - 1 tsp

Baking soda - 1 tsp

Salt - 1/2 tsp

Method:

1. Sieve the dry ingredients.

2. Mix thoroughly mashed bananas, oil, water and sugar.

3. Fold in the dry ingredients to the wet ingredients and mix well.

4. If the batter is thick add 2 to 3 tbsp of water. ( I used 2 tbsp).

5. Bake it in a preheated oven at 180 deg C for 20 - 25 min or until the skewer comes out clean.

6. Cool and then serve.






Vanilla Cupcakes

Since long back I am in search of cupcake recipes. Yesterday I got this recipe from Joy of Baking. As soon as i get it, I collected the ingredients and baked it today. Woow.. The cake was tasty and yummy. My kid loved it a lot.

Ingredients:

Maida - 1 1/2 cup ( The Original Recipe has All purpose Flour. As I didn't have with me, I substituted Maida ).

Butter -1/2 cup

Eggs - 3

Sugar - 2/3 cup

Milk - 1/4 cup

Baking Powder - 1 1/2 tsp

Vanilla Essence - 1 tsp

Lemon Zest - 1/2 tsp ( I used Orange Zest)

Salt - 1/4 tsp

Method:

1. Sieve in the dry ingredients.

2. Beat butter and sugar until creamy and smooth.

3. Add eggs one by one and beat well.

4. Add Vanilla essence, Lemon zest and beat for 1 min.

5. Now add dry ingredients with wet mixture alternating with milk. Mix well for 2 min.

6. Bake at 180 deg C for 18 - 20 min or until the cake tip is browned and a toothpick inserted into the center comes clean.

7. Cool and Serve.

Makes about 12 cupcakes.







Sponge Muffins


This is my maiden attempt in making muffins. These muffins were quite easy to make and very very fluffy too.


Ingredients:
Maida – 100 g
Butter – 100 g
Powdered sugar – 100 g
Eggs – 2
Baking Powder – ½ tsp
Pineapple essence – 1 tsp
Method:
1. Preheat oven to 180°C.
2. Beat eggs until light and fluffy.
3. Beat separately butter and sugar so that it is creamy.
4. Sieve the dry ingredients.
5. Combine eggs with butter and beat well.
6. Add Maida to the above mixture and beat well.
7. Add essence and mix.
8. Grease muffin pans/ line with paper cups and fill half of muffin.
9. Bake for 15 – 20 mins.
10. Remove, Cool, open and serve.
Variations I made:
I used Pineapple essence instead of vanilla essence. The taste was good.
I used orange zest also to enhance the flavor.
