Whole wheat double chocolate banana cake

This is a simple cake that can be baked with the ingredients easily available at home. Usually I bake chocolate cake which is a favorite for my kids at home. This time I added banana to it to add extra moist and soft cake.


How to bake:

1. Peel bananas and cut into small cubes. 


2. In a mixie jar, add sugar and cubed bananas and blend together to form a smooth batter.


3.  In a mixing bowl, add the banana-sugar mixture. To this add coconut oil, vinegar and vanilla and mix well until oil is well combined with other ingredients. 




4. In an another mixing bowl, place a sieve, add whole wheat flour, corn flour, cocoa, baking powder, baking soda, and salt. Sieve it well so that no lumps are there in your dry ingredients. 



5. Mix wet ingredients to the dry ingredients and mix them well. Don't over mix. Add water and mix them thoroughly.


6. Prepare a pan either by greasing the pan or just lining with parchment paper all sides. Transfer the batter to the loaf pan.


7. Add chocolate chips on the top.  Bake it in a preheated oven at 350F/180C for 35 min. Check out whether it is baked or not by a toothpick test. If inserted in the center comes out clean, it is done. Remove from the oven and cool completely before slicing.

Makes - 1 9" x 5" loaf.

Ingredients:

Blend:
Banana - 3 large (ripe well)
Turbinado raw sugar - 3/4 cup

Wet ingredients:
Banana puree 
Coconut oil - 1/2 cup
Vanilla extract - 1 tsp
Vinegar - 1 tsp

Dry ingredients:

Whole wheat flour - 1 cup
Corn flour - 2 tbsp
Cocoa powder - 1/2 cup
Baking powder - 1 tsp
Baking soda - 1/2 tsp
Salt - 1/4 tsp

Water - 1/2 cup
Chocolate chips - 3 tbsp(for topping)

Note:

1. You can use any flavorless oil other than coconut oil. No groundnut or sesame oil. Use sunflower oil instead.
2. I have used raw cane sugar. You can use any other sugar the same quantity.

Eggless Choclate Brownies - My 100 th Post


I proposed to bake brownies sometimes before and I have bookmarked few brownies with eggs. So I decided to bake Nita Mehta’s eggless chocolate brownies. I made few alterations to her recipe.



 
Here comes my version of brownies.

Ingredients:

Maida - 1 1/4 cups

Cocoa - 1/4 cup

Sugar - 3/4 cup [ See notes below ]

Baking powder - 1/2 tsp

Baking Soda - 1/2 tsp

Vanilla essence - 1 tsp

Oil / Butter - 1/4 cup [ I used Oil ]

Water - 1 cup [ See notes below ]

Salt - 1/4 tsp

Method:

1. Boil water. To the hot boiling water add cocoa and stir well so that lumps are removed. Let it cool.

2. Sieve Maida, baking powder, baking soda and salt twice or thrice.

3. In a bowl beat sugar and oil well.

4. Add cocoa mixture and stir well.

5. Add vanilla essence and stir well.

6. Add 2 tbsp of flour at a time and mi well.

7. Stir in all the flour and fold in for 2 min well.

8. Grease a baking tray and bake at 180 C for 25 min.

9. Remove from the oven, cool and cut into squares.

10. If needed, dust with sugar or garnish with frosting.


Notes:

1. I didn't have milk and curd at home to substitute for buttermilk. Hence I boiled water and stirred in cocoa in it. The cake was soft and delicious.

2. Recipe has only 3/4 cup of sugar. This sugar was little less. But if you want some sweeter just add 1/4 cup of sugar along with this one.


Vegan sooji Banana Cake

No maida is used in this cake and this made me to bake this cake. The result was really wonderful and great. Cake was moist and fluffy.

Don't roast the rava/Sooji as it will not absorb moisture after roasting. You can add elaichi powder too.


Ingredients:

Fine Sooji/Rava - 1 cup

Mashed banana - 1 cup

Oil - 1/4 cup

Water - 1/4 cup

Sugar - 1/2 cup

Baking powder - 1/2 tsp

Baking soda - 1/2 tsp

Salt - 1/4 tsp

Method:

1. If Sooji/Rava is not fine, grind it in mixie.

2. Add water and mix it sooji/Rava so that no lumps are formed.

3. I mashed the banana with baking powder and baking soda and I get a fluffy mixture.

4. Add oil and mix with banana well.

5. Add the Sooji/rava and mix well.

6. Rest it for 10 - 15 min so that Sooji will be soaked.

7. Bake it in preheated oven at 180 deg C for 30 - 35 min.

8. Remove when the cake is browned at top. Or else cake will become hard.

9. Cool and then serve.



Vegan banana muffins

Actually i got this recipe while browsing the net from Harini's blog. Thanx harini for your wonderful recipe. I had  some ripen bananas today and so I decided to bake this muffins. I halved the recipe and I baked it today. I omitted nuts from the original recipe as my kid doesn't love to eat it. Muffins were quite fluffy and moist. My kid loved it a lot. Here comes the recipe.

Ingredients:

Maida - 1 cup

Whole wheat flour - 1/2 cup

Sugar - 3/4 cup

Oil - 1/4 cup + half of 1/4 cup

Water - 1/4 cup + half of 1/4 cup

Mashed Bananas - 2 cups ( I used poovan variety)

Baking powder - 1 tsp

Baking soda - 1 tsp

Salt - 1/2 tsp

Method:

1. Sieve the dry ingredients.

2. Mix thoroughly mashed bananas, oil, water and sugar.

3. Fold in the dry ingredients to the wet ingredients and mix well.

4. If the batter is thick add 2 to 3 tbsp of water. ( I used 2 tbsp).

5. Bake it in a preheated oven at 180 deg C for 20 - 25 min or until the skewer comes out clean.

6. Cool and then serve.






Harisseh/ Basbousa - Semolina Cake - New year 2011 special



Basbousa- semolina coconut cake soaked in simple syrup.

It is a middle eastern traditional sweet cake flavored with rose water or cinnamon stick water. 

My kids love this with honey. So I added honey.

Brown sugar I used is turbinado sugar.



Ingredients:

Rava- 2 cup - fine variety
Dessicated coconut powder - 1 cup
Brown sugar - 1cup
Baking soda - 1 tsp
Butter - 3/4 cup - melted
Milk - 250ml
Almonds blanched -20

For syrup:

Brown Sugar - 1 1/2 cup
Water - 1/2 cup
Lemon juice - 2 tbsp
Honey - 2 tbsp



For syrup:
1. Place sugar in a pan and add water so that sugar just immersed in it.
2. Heat in a medium flame till sugar dissolves and the syrup slightly coats the back of the spoon.
3. Switch off and remove from the flame and add lemon juice.
4. When it is lightly warm, add honey and mix well. Then pour it on the baked and slightly cooled cake.

How to make/bake it?

1. Mix all the dry ingredients together.
2. Add melted butter and milk and mix well.
3. Pour this in a greased pan (I used 13*9 Pyrex glass pan) and level it with spatula.
4. Cover it with a plastic wrap and let it sit for 30-40 mins.
5. Then place half almonds leaving space inbetween and press them lightly.
6. Bake it in a preheated oven 345 F for about 30 mins or until the top is lightly golden.
7. Remove from the oven and Cool for 10 min. Cut into squares now itself to get a nice shape.
8. Pour the warm syrup on the cake and let it sit overnight for better taste.







Miranda/Orange Cake

As I have miranda in home, i tried with it. I got this recipe from Samsung microwave cookery class.
The cake is very yummy.

Ingredients:

Maida - 1 cup

Butter - 1/2 cup

Condensed milk - 1/2 tin

Sugar - 2 tbsp

Baking Powder - 1/2 tsp

Baking soda - 1/4 tsp

Vanilla essence - 1/4 tsp

Miranda - 100 ml (tinned)

Method:

1. Sieve all the dry ingredients.

2. Powder sugar.

3. Beat butter, condensed milk and sugar well.

4. Add essence and mix well.

5. Add maida and miranda alternately and beat well to get a smooth mixture.

6. Pour into a greased tin/ mould.

7. MW HI for 5 mins.

8. Standing time 5 mins.

Variation:

a). You can add Lehar soda instead of miranda and use pineapple essence instead of vanilla essence.

Paneer/ Cottage Cheese Cake

It is an amazing cake. So i named it as paneer cake as we add vinegar to milk and make paneer which is used here. I added oil instead of butter. If the batter is thick you can add lukewarm milk.

Ingredients:

Maida - 2 Cup

Powdered Sugar - 1 Cup

Baking soda - 1 Tsp

Cooking oil/butter - 1/2 Cup

Milk - 1 Cup

Vinegar - 1/4 Tsp

Vanilla essence - 1 Tsp


Method:

1. Mix all the dry ingredients plain flour, baking soda, coco powder and sugar.

2. Pour oil in the batter and mix it.

3. Boil the milk in a pan and put that vinegar let it be curdle. Then the whey will be separate. Cool it to room temperature.

4. Pour this in the cake batter (the whey and water both).

5. Mix it well and add vanilla essence.

6. Pour this batter in a grease cake mould and bake at 180 C for 20 to 25 min.

Variation:

A). Can add cocoa powder along with plain flour in the proportion of ½ : 1 ½

Microwave banana cake

Ingredients:

Mix Together:


Maida - 1 cup

Cooking soda - ½ tsp (sieve this with atta)

Oil , milk - each ¼ cup

Curd - 1/4 cup(lightly sour)

Brown sugar - ½ cup

Mashed, very ripe bananas -2 medium

Method:

Blend well and transfer to a greased plastic mould/Tupperware.

MW HI for 5 minutes.

Do not open the oven for 10 minutes (resting time).

Remove & unmould.

Serve with tea.
